  • 1 large egg
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chopped nuts (pecans or walnuts)
  • 1/2 cup shredded coconut (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, oats, sugars, baking soda, and salt until combined.
  3. In another bowl, cream the softened butter with both sugars until light and fluffy.
  4. Beat in the egg and vanilla extract until fully incorporated.
  5. Gradually mix dry ingredients into wet ingredients without overmixing.
  6. Gently fold in chocolate chips, nuts, and coconut flakes if using.
  7. Scoop tablespoon-sized portions onto prepared baking sheets about 2 inches apart.
  8. Bake for 10–12 minutes or until edges are golden; centers may look slightly underbaked.
  9. Allow cookies to cool on the sheets for about 5 minutes before transferring to wire racks.
