  • 1 bunch asparagus (about 12 spears)
  • 1 lemon (zested and juiced)
  • 4 cloves fresh garlic (minced)
  • 4 tbsp unsalted butter (melted)
  • 2 tbsp olive oil
  • Salt & pepper to taste
  • Fresh herbs (optional, e.g., dill or parsley)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Tear off two large sheets of aluminum foil, shiny side up, and place on a baking sheet.
  3. Arrange one salmon fillet in the center of each foil sheet and surround with asparagus spears.
  4. In a small bowl, combine melted butter, minced garlic, lemon juice, and zest; drizzle over the salmon and asparagus.
  5. Season generously with salt and pepper.
  6. Fold the edges of the foil tightly to seal the packets.
