  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup fresh parsley, chopped
  • 2 tsp ground cumin
  • 2 garlic cloves, minced
  • 3 tbsp tahini sauce
  • 4 pita breads
  • 1 cup diced vegetables (tomatoes, cucumbers)

Instructions

  1. Preheat the oven to 400°F (200°C). Drain and rinse chickpeas.
  2. In a mixing bowl, combine chickpeas, parsley, garlic, cumin, salt, and pepper. Mash until chunky.
  3. Form the mixture into balls or patties.
  4. Place falafel on a parchment-lined baking sheet, lightly spray with olive oil, and bake for 25-30 minutes until golden brown.
  5. Warm pitas in aluminum foil in the oven for 5-10 minutes.
  6. Cut pitas in half and fill with falafel and diced veggies. Drizzle with tahini sauce before serving.
