  • 1/4 cup apple cider

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, and salt until combined.
  3. In another bowl, cream the softened butter with granulated and brown sugars until fluffy (about 3 minutes).
  4. Mix in the egg and molasses until well combined. Gradually add apple cider and mix until smooth.
  5. Fold in dry ingredients until just incorporated—avoid overmixing!
  6. Scoop tablespoons of dough onto prepared sheets, roll in sugar, and space them about two inches apart.
  7. Bake for 10-12 minutes until edges are golden but centers remain soft.
  8. Cool slightly on the sheet before transferring to wire racks.
