2 tsp baking powder

3 large eggs (room temperature)
1 cup plain full-fat yogurt
1/3 cup vegetable oil
2 tsp vanilla extract
Zest of 1 lemon
Powdered sugar for dusting
Instructions
Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
In another bowl, beat eggs until frothy; mix in yogurt, oil, vanilla, and lemon zest until smooth.
Gradually fold the dry mixture into the wet ingredients until just combined.
Pour batter into the prepared pan and bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
Allow to cool in the pan for 10 minutes before transferring to a wire rack.
