  • 1 ruby red grapefruit, segmented
  • 2 mandarins, segmented
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh mint leaves, chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp honey

Instructions

  1. Peel and segment the oranges, grapefruit, and mandarins. Remove membranes for cleaner segments.
  2. Thinly slice the red onion; soak in cold water for about 10 minutes to mellow flavor.
  3. Roughly chop the fresh mint leaves.
  4. In a small bowl, whisk together olive oil, lemon juice, and honey until well combined.
