  • 2 lbs starchy potatoes (Russet or Yukon Gold)
  • 1 cup fresh green cabbage, chopped
  • 4 tbsp unsalted butter
  • 1/2 cup milk or cream
  • 1/4 cup green onions, finely chopped
  • Salt and pepper to taste

Instructions

  1. Peel and chop the potatoes into equal chunks. Place them in a large pot of cold salted water.
  2. Boil the potatoes over medium-high heat until tender, about 15-20 minutes.
  3. While the potatoes cook, melt butter in a skillet and sauté chopped cabbage and green onions for 5-7 minutes until softened.
  4. Drain the cooked potatoes, return them to the pot, and mash with warmed milk or cream until smooth.
  5. Gently fold in the sautéed cabbage mixture, seasoning with salt and pepper to taste.
  6. Serve warm, optionally topped with an extra pat of butter.
