Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/2 cup freshly squeezed lemon juice (about 2 lemons)
  • 4 tablespoons unsalted butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Chicken: Pat the chicken breasts dry with paper towels and season both sides with salt and pepper.
  2. Dredge: Set up two plates—one with flour and the other with beaten eggs. Dip each chicken breast in flour first, then coat in egg.
  3. Cook: In a large skillet, melt butter over medium-high heat. Add chicken and cook for about 4-5 minutes per side until golden brown and cooked through. Remove from skillet.
  4. Make Sauce: In the same skillet, add minced garlic and sauté until fragrant (about 1 minute). Pour in chicken broth and lemon juice; bring to a simmer.
  5. Combine: Return chicken to the skillet with any drippings. Simmer together for another couple of minutes until well combined.
  6. Serve: Plate the chicken drizzled with sauce and sprinkle fresh parsley on top.
