  • 1 cup green or brown lentils
  • 2 medium bell peppers, chopped
  • 1 medium zucchini, diced
  • 1 small red onion, chopped
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • Salt to taste
  • Pepper to taste
  • 1 tsp dried oregano

Instructions

  1. Rinse lentils under cold water until clear.
  2. Cook lentils in a medium pot with 3 cups of water; bring to a boil, then simmer for 20-25 minutes until tender.
  3. While lentils are cooking, chop bell peppers, zucchini, and red onion into bite-sized pieces.
  4. In a skillet, heat olive oil over medium heat. Add chopped veggies, season with salt, pepper, and oregano; sauté for about 5 minutes until tender.
  5. Combine cooked lentils with sautéed veggies in the skillet; stir in lemon juice.
  6. Serve warm and enjoy!
