  • 2 lbs beef chuck roast, cubed
  • 3 medium carrots, sliced
  • 2 stalks celery, chopped
  • 2 medium potatoes, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes with juice
  • 6 cups low-sodium beef broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion and minced garlic until golden brown.
  2. Add cubed beef and brown on all sides to lock in juices.
  3. Stir in carrots, celery, potatoes, diced tomatoes (with juice), bay leaves, thyme, salt, and pepper.
  4. Pour in beef broth to cover ingredients. Bring to a boil; then reduce heat to low and simmer for at least one hour.
  5. Once beef is tender, remove excess fat and serve hot. Garnish with fresh parsley if desired.
