  • 8 oz pasta of choice (spaghetti or penne)
  • 2 cups fresh spinach
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1 cup coconut cream
  • 1/4 cup nutritional yeast
  • 1 tsp garlic powder
  • 2 tbsp lemon juice
  • Salt & pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente (about 8-10 minutes). Drain and set aside.
  2. In a skillet over medium heat, sauté spinach in olive oil until wilted (3-4 minutes).
  3. Blend coconut cream, nutritional yeast, garlic powder, lemon juice, salt, and pepper until smooth.
  4. Fold artichokes into the spinach mixture and cook for another 2-3 minutes.
  5. Toss the cooked pasta with the spinach-artichoke mixture and creamy sauce until well combined.
