  • 8 oz penne pasta
  • 1 cup plain Greek yogurt
  • 1 medium cucumber, grated
  • 2 tbsp fresh dill, chopped (or 1 tbsp dried dill)
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. In a bowl, mix Greek yogurt, grated cucumber (squeezed to remove excess moisture), dill, minced garlic, lemon juice, olive oil, salt, and pepper.
  3. Combine the cooled pasta with the tzatziki mixture and toss until evenly coated.
  4. Cover and chill in the refrigerator for at least one hour to allow flavors to meld.
  5. Serve chilled, garnished with additional dill or cucumber slices.
