  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 3 large eggs, at room temperature
  • 1 cup semi-sweet chocolate chips
  • ½ cup caramel sauce (plus extra for drizzling)
  • ½ cup chopped pecans (lightly toasted)

Instructions

  1. Preheat oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter; press into the bottom of the pan.
  3. Bake crust for about 10 minutes until golden; cool completely.
  4. Beat cream cheese until smooth; gradually add sugar. Mix in eggs one at a time, followed by sour cream and fold in chocolate chips.
  5. Pour filling over cooled crust and bake for 55-60 minutes until set with a slight jiggle.
  6. Cool at room temperature before chilling in the fridge for at least four hours or overnight.
  7. Before serving, drizzle with caramel sauce and sprinkle with pecans.
