  • 2 slices sourdough bread
  • 4 oz sliced turkey breast
  • 2 oz Swiss cheese
  • 2 tbsp pesto sauce
  • 1 cup fresh spinach
  • 1 tbsp olive oil

Instructions

  1. Preheat your panini press or grill pan over medium heat. Drizzle olive oil on one side of each slice of sourdough bread.
  2. Spread pesto sauce generously on the un-oiled side of each slice.
  3. Layer the turkey breast, Swiss cheese, and fresh spinach on one slice, then top with the other slice (oiled side facing out).
  4. Place the sandwich in the preheated panini press or grill pan. If using a grill pan, press down with a spatula.
  5. Grill for 3-5 minutes until golden brown and crispy with melted cheese oozing out.
  6. Let cool slightly before slicing in half.
