Ingredients

  • 2 cups fresh or frozen tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers (assorted colors), chopped
  • 1/2 cup red onion, finely chopped
  • 1/4 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp dried Italian herbs (oregano and basil)
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini in boiling salted water according to package instructions until al dente. Drain and let cool.
  2. While the tortellini cools, chop the cherry tomatoes, cucumber, bell peppers, and red onion into bite-sized pieces.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, dried herbs, salt, and pepper until combined.
  4. In a large mixing bowl, combine cooled tortellini with chopped veggies. Pour the dressing over the salad and toss gently until evenly coated.
  5. Cover with plastic wrap or transfer to an airtight container; chill in the refrigerator for at least 30 minutes before serving.
