  • 9 wide lasagna noodles
  • 1 cup ricotta cheese
  • 1 ½ cups shredded mozzarella cheese
  • 2 cups marinara sauce
  • ½ cup grated Parmesan cheese
  • 1 cup fresh spinach or basil leaves
  • 1 large egg
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. Cook the lasagna noodles in salted water until al dente (about 8 minutes). Drain and lay flat on parchment paper.
  3. In a bowl, mix ricotta, half the mozzarella, egg, spinach, salt, and pepper until smooth.
  4. Spread filling onto each noodle, roll tightly, and place seam-side down in the baking dish.
  5. Pour marinara sauce over the roll-ups and sprinkle remaining mozzarella and Parmesan on top.
  6. Cover with foil and bake for 25 minutes; remove foil and bake for another 10 minutes until bubbly.
