  • 1/4 cup fresh pineapple juice
  • 2 tbsp low-sodium soy sauce

  • 1/2 cup ketchup
  • 2 tsp cornstarch
  • 1 tsp sesame oil
  • Pineapple chunks (fresh or canned)
  • Green onions (for garnish)

Instructions

  1. In a bowl, mix ground beef, panko breadcrumbs, egg, garlic powder, salt, and pepper until combined.
  2. Roll mixture into bite-sized meatballs and place on a baking sheet.

  4. In another bowl, whisk together pineapple juice, soy sauce, ketchup, brown sugar, cornstarch, and sesame oil.
  5. Place meatballs in the crockpot and pour the sauce over them; stir gently to coat.
  6. Cook on low for 4-6 hours or high for 2-3 hours until tender.
