  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and cubed (about 3 cups)
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, rinsed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tsp cumin
  • 2 tsp chili powder
  • 4 cups low-sodium vegetable broth
  • Juice of 1 lime
  • Salt and pepper to taste
  • Fresh cilantro (optional)

Instructions

  1. Prep your ingredients by dicing the onion, mincing the garlic, and cubing the sweet potatoes.
  2. In a large pot over medium heat, add a splash of olive oil and sauté the onions until translucent, about 5 minutes. Add minced garlic and cook until fragrant.
  3. Stir in the ground turkey; cook until browned for about 6-8 minutes.
  4. Add sweet potatoes, diced tomatoes, black beans, cumin, chili powder, salt, pepper, and vegetable broth; mix well.
  5. Bring to a boil then reduce heat to low; simmer uncovered for 30-35 minutes until sweet potatoes are tender.
  6. Just before serving, squeeze lime juice over the top. Serve in bowls with optional cilantro garnish.
