  • 2 tablespoons extra virgin olive oil
  • 1 cup shredded cheddar cheese
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 fresh jalapeño, thinly sliced
  • ½ cup diced tomatoes
  • ½ cup sour cream or Greek yogurt (for serving)
  • Fresh cilantro (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice sweet potatoes into thin rounds (approximately 1/4 inch thick). Toss in olive oil, sprinkle with salt and pepper, then arrange in a single layer on the prepared baking sheet.
  3. Bake for 20-25 minutes until golden brown and crispy, flipping halfway through.
  4. Remove from the oven and layer shredded cheese over the sweet potatoes. Top with black beans, jalapeños, and diced tomatoes.
  5. Return to the oven for an additional 5-7 minutes until the cheese is melted.
