Sweet Potato Chicken Poppers are a deliciously crispy, bite-sized treat that combines tender chicken and creamy sweet potatoes, seasoned to perfection.   • 1 lb boneless, skinless chicken breasts, cut into small pieces
  • 2 medium sweet potatoes, peeled and diced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • 1 cup panko breadcrumbs (gluten-free if needed)
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Roast diced sweet potatoes on a baking sheet for about 20 minutes until fork-tender.
  2. In a skillet over medium heat, cook the chicken pieces until no longer pink inside, approximately 7-10 minutes.
  3. In a mixing bowl, mash together the cooked sweet potatoes and chicken until smooth.
  4. Stir in garlic powder, onion powder, cayenne pepper, salt, pepper, and half of the panko breadcrumbs until well combined.
  5. Form the mixture into golf-ball-sized balls and roll each in the remaining panko breadcrumbs.
  6. Place on a greased baking sheet and drizzle lightly with olive oil. Bake for 25-30 minutes until golden brown and crispy.
