  • 3 tbsp unsalted butter, melted

  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup mini marshmallows
  • 1/2 cup chopped pecans (toasted if desired)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the sweet potato cubes with melted butter, brown sugar, cinnamon, and salt until well coated.
  3. Spread the sweet potato mixture evenly on the prepared baking sheet and roast for 25-30 minutes until tender and lightly golden.
