1 cup unsweetened cocoa powder
1 ½ cups granulated sugar
1 cup all-purpose flour
3 large eggs (room temperature)
½ cup unsalted butter (melted)
1 tsp pure mint extract
2 cups powdered sugar (for frosting)
Green food coloring (optional)
Instructions
Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan or line with parchment paper.
In a medium bowl, melt the butter. Stir in cocoa powder, sugar, and flour until combined.
Add eggs one at a time, mixing until smooth. Incorporate vanilla and mint extracts.
Pour the batter into the prepared pan and bake for 20-25 minutes until edges are set and center is soft.
Allow brownies to cool completely on a wire rack before preparing the frosting: beat together softened butter and powdered sugar, then add mint extract and food coloring if desired.
Frost cooled brownies, let set, and slice into squares.
