  • 1 ½ cups granulated sugar
  • 1 cup all-purpose flour
  • 3 large eggs (room temperature)
  • ½ cup unsalted butter (melted)
  • 1 tsp pure mint extract
  • 2 cups powdered sugar (for frosting)
  • Green food coloring (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan or line with parchment paper.
  2. In a medium bowl, melt the butter. Stir in cocoa powder, sugar, and flour until combined.
  3. Add eggs one at a time, mixing until smooth. Incorporate vanilla and mint extracts.
  4. Pour the batter into the prepared pan and bake for 20-25 minutes until edges are set and center is soft.
  5. Allow brownies to cool completely on a wire rack before preparing the frosting: beat together softened butter and powdered sugar, then add mint extract and food coloring if desired.
