  • 1/2 cup plain breadcrumbs
  • 1 small onion (finely chopped)
  • 1 large egg
  • 1/4 cup milk
  • 2 cups low-sodium beef broth
  • 1/2 cup sour cream
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, chopped onion, egg, and milk. Mix until just combined.
  2. Roll the mixture into golf ball-sized meatballs (about two tablespoons each) and place on a lined baking sheet.
  3. In a skillet over medium heat, add oil and brown the meatballs on all sides for about five minutes.
  4. Remove excess grease from the skillet, then add beef broth and bring to a simmer.
  5. Stir in sour cream and Dijon mustard until blended.
  6. Return meatballs to the skillet, cover, and let simmer for ten minutes until cooked through.
