  • 1 pound lean ground beef or turkey
  • 1 cup cooked rice (white or brown)
  • 1 can (14.5 oz) diced tomatoes
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • Olive oil for sautéing
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Cut the tops off the bell peppers and remove seeds; set aside.
  3. In a skillet over medium heat, sauté the onion and garlic in olive oil until soft.
  4. Add ground meat and cook until browned. Stir in cooked rice and diced tomatoes; season with salt and pepper.
  5. Fill each pepper with the meat mixture and place upright in the baking dish.
