  • 4 fresh artichokes
  • 1 cup plain breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • Zest of 1 lemon
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Trim the stems of the artichokes and gently pull apart the leaves for stuffing.
  2. In a mixing bowl, combine breadcrumbs, Parmesan cheese, garlic, parsley, lemon zest, salt, and pepper. Drizzle with olive oil until evenly moistened.
  3. Generously stuff the filling between each artichoke leaf.
  4. Place stuffed artichokes in a baking dish with about an inch of water. Cover with foil and bake for 45 minutes.
  5. Remove foil and bake for an additional 15 minutes until tops are golden brown and crispy.
  6. Serve warm with extra olive oil or cheese if desired.
