  • ½ cup unsalted butter, softened
  • ⅓ cup granulated sugar
  • ¼ cup powdered sugar
  • 1 tsp cardamom powder
  • 1 tsp vanilla extract
  • 1 large egg yolk
  • ½ cup strawberry jam

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cardamom powder, and powdered sugar.
  3. In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Mix in the egg yolk and vanilla extract until well combined.
  5. Gradually add dry ingredients to the wet mixture, stirring until just combined.
  6. Roll out half the dough on a floured surface to about ¼ inch thick; cut shapes using cookie cutters.
  7. Place cut-out cookies on prepared baking sheets and bake for 12-15 minutes or until edges are lightly golden.
  8. Allow cookies to cool completely before spreading strawberry jam on half of them, then sandwich with remaining cookies.
