  • 1 lb large shrimp, peeled and deveined
  • 1 cup jasmine rice
  • 2 cups water
  • 1 cup bell peppers, sliced (mixed colors)
  • 2 green onions, thinly sliced
  • 2 cloves garlic, minced
  • 2 tsp chili powder
  • Juice of 1 lime (about 2 tbsp)
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp olive oil
  • ¼ cup cilantro, chopped (optional)

Instructions

  1. Rinse jasmine rice under cold water until clear. In a pot, combine rice and water; bring to boil over medium-high heat.
  2. Once boiling, reduce heat to low, cover, and simmer for about 15 minutes until water is absorbed and rice is fluffy.
  3. Meanwhile, heat olive oil in a large skillet over medium-high heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add shrimp seasoned with chili powder; cook for about 3-4 minutes until pink.
  5. Stir in sliced bell peppers; cook for another 3-4 minutes until tender-crisp.
  6. Drizzle soy sauce and lime juice into the skillet; mix well to combine flavors.
  7. Fluff the cooked rice and serve in bowls topped with the shrimp mixture. Garnish with green onions and cilantro if desired.
