  • 14 oz firm tofu, pressed and cubed
  • 1/4 cup natural peanut butter
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp fresh ginger, grated
  • 2 garlic cloves, minced
  • 1 tbsp chili paste (adjust to taste)
  • Juice of 1 lime

Instructions

  1. Prepare the tofu by draining and pressing it for about 20 minutes to remove moisture. Cut into cubes.
  2. Heat oil in a large skillet over medium heat. Sauté minced garlic and grated ginger until fragrant (about 1 minute).
  3. Add cubed tofu to the skillet and cook undisturbed for about 5 minutes until golden brown on one side; flip gently.
  4. Add bell peppers, broccoli, and snap peas to the skillet; stir-fry for 3-4 minutes until vibrant.
  5. In a small bowl, mix peanut butter, soy sauce, chili paste, and lime juice into a smooth sauce. Pour over stir-fried veggies and tofu.
  6. Toss everything together until well coated; cook for another minute or two until heated through. Serve warm over rice or noodles.
