Ingredients

Scale
  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup dark brown sugar
  • 1/2 cup eggnog
  • 1/2 tsp ground cinnamon
  • 1/2 tsp freshly grated nutmeg
  • 1/2 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, mix melted butter, granulated sugar, and brown sugar until smooth. Add the egg and mix well, then stir in eggnog and vanilla.
  3. In a separate bowl, whisk together flour, oats, cinnamon, nutmeg, and a pinch of salt. Gradually fold this into the wet ingredients until combined.
  4. Scoop rounded tablespoons of dough onto prepared sheets about two inches apart. Bake for 10-12 minutes until golden around the edges but soft in the center.
  5. Allow cookies to cool on sheets for 5 minutes before transferring to wire racks.
  6. For the filling, beat cream cheese and powdered sugar until smooth; add more eggnog if needed for consistency.
  7. Once cookies are cool, spread filling between two cookie halves to assemble pies.
