  • 1 whole chicken (45 lbs)
  • 2 tbsp extra virgin olive oil
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tbsp fresh thyme or rosemary (chopped)
  • Juice of 1 lemon
  • 4 cloves garlic (minced)
  • 1 tsp paprika

Instructions

  1. Preheat your oven to 450°F (232°C) and line a baking sheet with aluminum foil.
  2. Place the chicken breast-side down on a cutting board and remove the backbone using kitchen shears. Flip the chicken over and press down to flatten.
  3. Drizzle olive oil over the chicken, then season generously with salt, pepper, minced garlic, paprika, and herbs. Squeeze lemon juice on top.
  4. Place the seasoned chicken skin-side up on the baking sheet and roast for 45-55 minutes until golden brown and juices run clear at the thickest part.
