Spanakopita is a delightful Greek pastry that features flaky phyllo dough enveloping a savory filling of spinach and feta cheese.   • 1 package (16 oz) phyllo dough, thawed
  • 1 lb fresh spinach, chopped
  • 8 oz feta cheese, crumbled
  • 1 medium onion, finely chopped
  • 2 tbsp fresh dill, chopped
  • 2 large eggs
  • 4 tbsp olive oil or melted butter (for brushing)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish with nonstick spray.
  2. In a skillet over medium heat, sauté the chopped onion in olive oil until translucent (about 5 minutes). Add the spinach and cook until wilted; let cool.
  3. In a bowl, combine the cooled spinach mixture with crumbled feta, dill, eggs, salt, and pepper.
  4. Layer phyllo sheets in the greased dish, brushing each sheet lightly with butter or olive oil. Spoon half the filling onto the layered phyllo.
  5. Repeat layering with more phyllo and the remaining filling. Top with another layer of phyllo brushed with butter.
  6. Cut into squares/triangles and bake for 30-40 minutes until golden brown.
