  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely diced
  • 1 cup bell peppers (any color), chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lime juice

Instructions

  1. Rinse and drain the black beans and kidney beans to remove excess sodium.
  2. Halve the cherry tomatoes and chop the bell peppers into bite-sized pieces.
  3. Finely dice the red onion; soak in cold water for 10 minutes if desired to mellow its flavor.
  4. In a large bowl, combine all the beans and chopped vegetables.
  5. In a separate bowl, whisk together olive oil and lime juice until well combined. Pour over the bean mixture and toss gently to coat.
  6. Chill in the refrigerator for at least 20 minutes before serving to allow flavors to meld.
