  • 4 beef shanks (about 2 lbs)
  • 2 medium onions, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 cup red wine
  • 1 can (14 oz) crushed tomatoes
  • 2 cups beef broth
  • 1 tsp fresh thyme
  • 1 tsp fresh rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a Dutch oven, heat oil over medium-high heat. Season beef shanks with salt and pepper; sear until browned on all sides.
  3. Remove shanks and sauté onions, carrots, celery, and garlic until fragrant, about five minutes.
  4. Deglaze the pot with red wine, scraping up brown bits. Simmer for five minutes.
  5. Stir in crushed tomatoes and beef broth; add thyme and rosemary. Return beef shanks to the pot.
  6. Cover and braise in the oven for three hours or until fork-tender.
