  • 2 tbsp extra virgin olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 bell peppers, sliced (assorted colors)
  • 1 can (14 oz) diced tomatoes
  • 1 cup low-sodium chicken broth
  • 2 tsp Italian seasoning
  • ½ cup crumbled feta cheese
  • Fresh parsley or basil, chopped for garnish

Instructions

  1. Prepare your ingredients by chopping the onion and bell peppers.
  2. In a skillet over medium heat, warm olive oil. Sauté onions until translucent, then add garlic and cook for an additional minute.
