  • 2 cups all-purpose flour
  • 1 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 cups dried mixed fruit (sultanas, currants, raisins)
  • 1 cup ground almonds
  • 4 large eggs, room temperature
  • 2 tsp mixed spice powder (cinnamon, nutmeg, ginger)
  • 8 oz marzipan (for topping)
  • 1/4 cup apricot jam (for glaze)
  • Blanched whole almonds (for decoration)

Instructions

  1. Preheat the oven to 325°F (160°C). Prepare an 8-inch round cake pan by greasing it.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  3. Gradually sift in the flour and mixed spice powder. Gently fold in the ground almonds and dried mixed fruits until just combined.
  4. Pour the batter into the prepared cake pan and bake for about 1 hour or until a skewer comes out clean.
  5. Once cooled, brush the top with apricot jam and cover with rolled-out marzipan.
  6. Decorate with blanched almonds and caramelize under a broiler until golden.
