  • 1 cup cucumber (diced)
  • 1 cup cherry tomatoes (halved)
  • 1 avocado (diced)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Boil water in a large pot and add salt. Cook shrimp for about 3-4 minutes until pink and opaque. Drain and cool under cold running water.
