  • 1 lb large shrimp (2125 count), peeled and deveined
  • 2 cups fresh basil leaves, packed
  • 3 cloves garlic, minced
  • ¼ cup pine nuts, toasted (or walnuts)
  • ½ cup grated Parmesan cheese
  • ⅓ cup extra virgin olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  2. In a food processor, blend basil leaves, garlic, pine nuts, Parmesan cheese, and olive oil until smooth. Add lemon juice and pulse to combine.
  3. In a skillet over medium heat, sauté the shrimp in olive oil until pink (about 2 minutes per side). Season with salt and pepper.
  4. Add drained pasta to the skillet with shrimp, then pour in the pesto. Toss gently, adding reserved pasta water as needed for desired creaminess.
