  • 2 cups waxy potatoes (peeled and cut into ghost shapes)
  • 1 cup carrots (sliced)
  • 1 large onion (diced)
  • 4 cloves garlic (minced)
  • 4 cups low-sodium beef broth
  • 1 cup red wine
  • 2 tsp fresh thyme (or 1 tsp dried thyme)
  • 2 bay leaves
  • Salt & pepper to taste
  • 2 tbsp olive oil
