Ingredients

Scale
  • 4 large russet baking potatoes
  • 1 lb lean ground beef or lamb
  • 1 cup finely chopped carrots
  • 1 cup frozen peas
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 2 tbsp Worcestershire sauce
  • 4 oz cream cheese or sour cream
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 400°F (200°C). Pierce each potato with a fork and bake directly on the oven rack for about 45 minutes until tender.
  2. In a skillet over medium heat, add olive oil and sauté chopped onions and minced garlic until fragrant.
  3. Stir in ground beef or lamb; cook until browned. Add carrots, frozen peas, Worcestershire sauce, and beef broth. Simmer until veggies soften.
  4. Remove from heat; mix in cream cheese or sour cream until creamy. Season with salt and pepper.
  5. Slice baked potatoes down the middle without cutting through completely. Fluff insides with a fork; spoon in filling generously.
  6. Sprinkle shredded cheese on top and return to the oven for an additional 10 minutes until cheese melts.
