  • 1.5 lbs boneless, skinless chicken thighs
  • 4 cups fresh broccoli florets
  • 2 tbsp fresh ginger, grated
  • 4 garlic cloves, minced
  • 1/3 cup low-sodium soy sauce
  • 2 tbsp honey or maple syrup
  • 2 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. 1. Preheat your oven to 425°F (220°C).
  2. 2. In a bowl, whisk together soy sauce, honey or maple syrup, minced garlic, grated ginger, rice vinegar, sesame oil, and red pepper flakes.
  3. 3. Marinate the chicken thighs in half of the marinade for at least 30 minutes.
  4. 4. Toss broccoli florets with oil, salt, and pepper.
  5. 5. On a lined baking sheet, arrange marinated chicken and scattered broccoli.
  6. 6. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and is caramelized.
