  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves garlic, minced
  • 1/4 cup freshly squeezed lemon juice
  • 2 tsp dried oregano
  • 2 bell peppers (any color), sliced
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup olive oil
  • 1 cup plain Greek yogurt
  • 1/2 cucumber, grated and drained
  • 1 tbsp fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken breasts and coat well; marinate for at least 15 minutes.
  3. Slice bell peppers and toss them in the remaining marinade.
  4. Arrange marinated chicken on one side of the baking sheet and veggies on the other.
  5. Roast for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C).
  6. Serve wrapped in pita bread with tzatziki sauce.
