  • 4 large flour tortillas
  • 6 large eggs
  • 4 oz diced bacon or sausage
  • 1 cup shredded sharp cheddar cheese
  • 1 cup diced bell peppers (mixed colors)
  • 1/2 cup diced onion
  • 1 tsp cumin or paprika (optional)
  • Salsa for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, cook diced bacon or sausage until golden brown. Remove and set aside.
  3. In the same skillet, sauté diced bell peppers and onions until softened, about 5 minutes.
  4. In a bowl, whisk together eggs with salt and pepper until fluffy.
  5. Lay out tortillas flat; layer in cooked meat, sautéed veggies, shredded cheese, and egg mixture. Roll tightly.
  6. Place burritos seam-side down on a greased sheet pan. Bake for 15-20 minutes until golden brown.
