  • 1 bell pepper, diced
  • 3 garlic cloves, minced
  • 1 can (28 oz) whole peeled tomatoes

  • 1 tsp smoked paprika
  • 4 large eggs
  • Salt and pepper to taste
  • Fresh herbs (cilantro or parsley) for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté the diced onion and bell pepper until soft, about 5 minutes.
  2. Add minced garlic, ground cumin, and smoked paprika; cook for an additional minute.

  4. Create wells in the sauce and crack an egg into each well. Cover the skillet and cook until egg whites are set but yolks remain runny, about 5 minutes.
