  • 1 lb fresh salmon fillets
  • 1 sheet store-bought puff pastry (thawed)
  • 4 oz cream cheese (softened)
  • 2 cups fresh spinach
  • 1 tbsp olive oil
  • 2 tsp dill (fresh or dried)
  • Zest of 1 lemon
  • Salt and pepper to taste
  • 1 egg yolk (for egg wash)
  • 1 tbsp water or milk (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet, heat olive oil over medium heat and sauté spinach until wilted (about 2 minutes). Remove from heat and let cool.
  3. In a bowl, mix softened cream cheese, sautéed spinach, dill, lemon zest, salt, and pepper until combined.
  4. Roll out puff pastry on a floured surface to about ¼-inch thick. Place half the filling in the center, add the salmon fillet, then top with remaining filling. Fold edges over to seal.
  5. Whisk egg yolk with water/milk and brush over the pastry.
  6. Bake for 25-30 minutes until golden brown. Let cool slightly before slicing.
