  • 8 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers (mixed colors), diced
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/4 cup fresh basil leaves, torn
  • 1/4 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar or red wine vinegar
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Boil salted water in a large pot. Add rotini pasta and cook according to package instructions until al dente (about 8-10 minutes). Drain and rinse under cold water until cool.
  2. While the pasta cooks, chop cherry tomatoes, bell peppers, cucumber, and red onion into bite-sized pieces.
  3. In a small bowl, whisk together olive oil, vinegar, salt, and pepper.
  4. In a large mixing bowl, combine the cooled pasta with the chopped vegetables and dressing. Toss well to coat evenly.
  5. Gently fold in torn basil leaves and sprinkle cheese on top if using.
  6. Chill in the fridge for at least 30 minutes before serving.
