  • 1 cup chopped carrots
  • 1/2 cup thinly sliced red onion
  • 1/2 cup chopped dill pickles
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wash beets thoroughly, wrap in foil, and place on a baking sheet. Roast for 45-60 minutes until tender. Allow to cool before peeling and dicing into bite-sized pieces.
  2. While the beets roast, chop the carrots and red onion, and prepare the dill pickles.
  3. In a bowl, mix together mayonnaise and Dijon mustard; season with salt and pepper to taste.
  4. In a large mixing bowl, combine diced beets, carrots, red onion, and pickles. Pour in the dressing and gently fold until well combined.
