  • 2 fresh jalapenos (halved and seeded)
  • 1 cup sharp cheddar cheese (shredded)
  • 4 oz cream cheese (softened)
  • 4 slices sourdough bread
  • 2 tbsp unsalted butter

Instructions

  1. Preheat your oven to 400°F (200°C). Place halved jalapenos cut-side down on a baking sheet lined with parchment paper. Roast for 15-20 minutes until blistered.
  2. While the jalapenos roast, mix the cream cheese and sharp cheddar in a bowl until well combined.
  3. Spread the cheese mixture on one side of each slice of sourdough bread. Layer on roasted jalapenos and top with another slice of bread.
  4. Heat butter in a skillet over medium heat. Cook each assembled sandwich until golden brown, about 3-4 minutes per side, pressing down slightly for even melting.
