  • 1 head cauliflower (about 1 lb), chopped
  • 1 whole bulb garlic
  • 1 medium yellow onion, diced
  • 4 cups low-sodium vegetable broth
  • 4 oz cream cheese
  • 1 cup shredded sharp cheddar cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Slice off the tops of the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  2. In a large pot over medium heat, add olive oil and diced onion; sauté until translucent (about 5 minutes). Stir in chopped cauliflower.
  3. Pour in vegetable broth until vegetables are just covered. Bring to a boil, then reduce heat and simmer until cauliflower is tender (15-20 minutes).
  4. Blend the soup until smooth using an immersion blender or regular blender, adding roasted garlic cloves during blending.
  5. Return blended soup to heat and stir in cream cheese until melted. Add shredded cheddar cheese gradually while stirring until fully melted.
  6. Season with salt and pepper to taste before serving hot, garnished with parsley if desired.
