  • 2 medium Delicata squashes (about 1.5 lbs total)
  • 3 tbsp extra virgin olive oil
  • 1 tsp sea salt
  • 1/2 tsp freshly ground black pepper
  • 2 tbsp pure maple syrup (optional)
  • 1/4 tsp ground cinnamon (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the Delicata squashes in half lengthwise and scoop out the seeds.
  3. Place the squash halves cut-side up on a parchment-lined baking sheet. Drizzle with olive oil, then sprinkle with salt and pepper.
  4. For added sweetness, drizzle with maple syrup and dust with cinnamon if desired.
  5. Roast for 25-30 minutes until tender and lightly browned around the edges.
  6. Allow to cool slightly before serving. Slice into wedges for easy sharing.
