  • 2 tablespoons fresh herbs (sage or thyme), chopped
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Halve the butternut squash lengthwise and scoop out the seeds.
  3. Use a spiralizer or vegetable peeler to create noodle shapes from the squash. If unavailable, slice into ribbons.
  4. In a large bowl, mix butternut squash noodles with olive oil, minced garlic, salt, and pepper until well-coated.
  5. Spread seasoned noodles on a parchment-lined baking sheet and roast for 20-25 minutes until tender and slightly caramelized.
  6. Sprinkle fresh herbs over the noodles during the last five minutes of roasting.
  7. Serve warm, optionally topped with grated Parmesan cheese.
